low temperature pasteurization?
I have a immersion circulator and was hoping to use it to "can" some pickles. The circulator is great for holding a constant temperature but it increases temperature slowly. How much time do you have to safely heat from 140 to 180 degrees? can you just start the cans in 180 degree water?
